We were big on camping and loved this recipe. Sourdough starter is an easy camping item. It needs no refrigeration, and just requires a daily feeding of flour and water, which is easy to carry as well as mix up while camping.

Quail Hollow Kitchen’s –  Sourdough Hotcakes

2 cups sourdough starter

2 tablespoons sugar

4 tablespoons oil

1 egg

1/2 teaspoon salt

1 scant teaspoon baking soda to 1 full teaspoon if starter is real sour

1 tablespoon water

Mix well the sourdough starter, sugar, oil, egg and salt.  Dilute baking soda in water. When griddle is hot, gently fold baking soda water mixture into sourdough mixture. The sourdough mixture will double in size quickly as you start cooking your hot cakes. Brown about 2 to 3 mins each side.

If you need sourdough starter I always have some. The next bread-making classes are:
