Bees have been making honey long before mankind appeared on Earth. Honey has been the focus in many myths and found throughout history. Bees are depicted in Egyptian hieroglyphics that date back some 6000 years. In Greek mythology, the infant Zeus – destined to be the most powerful of the gods – was fed honey by the bees. The Romans also believed that honey belonged in the daily diet of anyone desiring a long and healthy life. The Rig-Veda, the sacred book of India often refers to bees: The three gods, Vishnu, Krishna, and Indra, are called “the nectar-born.”
September also marks the end of the honey collection season. Our last honey harvest here at Quail Hollow Kitchens was about a month ago. My daughter maintains four hives here now. She calls them her bee “Babies.” We harvested about two gallons of honey this year. September is also known as National Honey month, helping to promote American beekeeping. We hope you try this honey condiment, you can eat it just as it is or maybe on your next sandwich. “From our Kitchen to Your Table.”
Honey Cucumber Pickle

1/2 cup cider vinegar

1 cup honey

2 tablespoons sesame oil

½ teaspoon sea salt

Pinch of black pepper

2 small cucumbers sliced in rounds

1 onion thinly sliced
(optional)

1 teaspoon parsley minced
Place first five ingredients into a sauce pan. Warm mixture over low heat until dissolved and smooth. Pour sauce over cucumbers, onions and parsley. Allow to cool then cover and refrigerate overnight before serving.
