We would like to share with you a favorite summer treat, and we hope you try this recipe for your next picnic. In an Angel Cake, the air incorporated into the batter by beating the egg whites is the leavening agent. This recipe is wonderful as-is, or add some berries and whipping cream toppings for a festive Fourth of July dessert. You should always start with the egg whites at room temperature for a lighter cake, and remember not to grease the pan, as that deflates the egg whites. If your cake comes out tough, the oven may have been too warm, or the cake batter may have been overmixed. Another tip is that if the volume of cake is low you may have over- or under-beat the egg whites. One last note of advice: If the crust is sticky, the cake may be under-baked. Patricia Old Fashioned Angel Cake

• Sift together twice and set aside: • 1 cup cake flour • ⅔ cup sugar

Beat until stiff and soft peaks form: • 1 ½ cups (12) egg whites • 1 ½ teaspoons cream of tartar • ¼ teaspoon salt • 1 ½ teaspoons pure vanilla •

Final Addition: • ¾ cup sugar

Preheat oven to 375 degrees.

Beat egg whites, cream of tartar, salt, and vanilla until stiff, glossy yet still moist. Slowly add the 3/4 cup sugar 2 tablespoons at a time. Continue to beat egg whites until stiff peaks form. Once egg whites are stiff, sift ¼ cup flour mixture over egg whites and gently fold in, continue additions in fourths folding gently. Bake in an ungreased tube pan for 35 to 40 minutes.

The Angel Cake is done when it springs back to the touch. Immediately invert tube pan to cool, this maintains the cake volume. For a brown crust, invert and allow cake to cool completely in the tube pan.
