Brown Bread for Cold Days

In the midst of winter, we can’t
wait for spring to arrive. It’s
March, when the sun shines hot
and the wind blows cold. This
month’s recipe is in honor of Irish
Americans and is a traditional
Irish brown bread with the simple combination of whole wheat,

molasses, yeast and salt. Traditional Irish brown breads lack sugar
and fat, which Americans have
come to add. It is an uncommonly
well-textured whole wheat bread
with a lovely flavor. It should be
eaten fresh. It is an unusual recipe,
since the dough is not kneaded
and has only one rise. We hope
it takes you back to Ireland. May

Traditional Irish Brown
Bread
• 3 ¾ cup (450 grams) wholewheat flour
• 1 ½ packages (10 grams)
active dry yeast
• 1 ½ cups plus 2 Tablespoons
(380 grams) warm water
(100°F approximately
• 2 tablespoons molasses
• 1 tablespoon (17 grams) sea
salt
Warn your oven to about 90°F degrees but not more than 100°F put
your whole wheat flour in a large
mixing bowl into the 100°F oven
to warm. A pilot light works for
this. Both flour and bowl need to
be warm when mixing this dough.
Dissolve the yeast in half of the
warmed water, and blend in the
molasses. Let bloom. About a ½
inch of chocolate foam should
appear on the top of the yeasted
molasses water.
Next, in the warmed mixing bowl,
combine flour, yeast mixture, salt,
and the remainder of the water.
Mix to completely blend. This
makes a wet sticky dough. Put
dough directly into a buttered
9x5x3 inch bread pan.
Cover and allow to rise by onethird its original size. Preheat the
oven and bake at 450°F for 30 minutes (until the inside temperature
reaches 202°F degrees). The bread
is fully cooked when it sounds
hollow. Turn off the oven remove
bread from the pan and allow it to
sit in the oven for 20 minutes for
a crustier finish. The bread will
stick to the rack, so place a piece of
parchment under it.
