As the days get shorter it feels like there’s less time in the day to get things done. It’s easy to rush through your routine and skip over your relaxation time. Making time for yourself is important. So is treating yourself to something delightful. Something rich and with a bit of a boozy kick and a perfect coffee buzz, perhaps. Something easy to make, requiring only mixing and freezing. Allow me to introduce you to No Churn Coffee Ice Cream, a marvelous and easy ice cream flavor that’s all for the adults (sorry, kids).

 

Yields 1 pint

 

1 cup heavy whipping cream (see notes)

1/2 cup sweetened condensed milk

2 tablespoons cognac (see notes)

1/2 teaspoon vanilla extract

1 Tablespoon good quality instant coffee

1/ 3 cup mini chocolate chips

 

Method

 

Dissolve instant coffee powder in cognac and vanilla. Add cognac and coffee mixture to the sweetened condensed milk. Mix until thoroughly combined. Whip cream until it forms stiff peaks. Gently fold condensed milk into cream. Transfer to a parchment paper or plastic wrap lined loaf pan (or a container with an airtight lid). Cover the surface of ice cream with parchment paper. Freeze for 2 hours. Gently mix in chocolate chips. Cover again and freeze for another 3 hours. To serve, leave at room temperature for 10-15 minutes, or until it is soft enough to scoop. After scooping, re-cover the surface of the ice cream before returning it to the freezer.

 

Note:  cream should be as cold as possible when you whip it. Cognac can be replaced with water or with another similar alcohol such as brandy. Bourbon or rum would also do nicely in this. Even without the booze I wouldn’t serve this to kids due to the presence of caffeine. As for the instant coffee, if you enjoy drinking a regularly prepared cup of it you can consider it a good quality instant coffee. If you can find it (and you usually can in the baking aisle of most medium to large supermarkets these days), parchment paper cut to fit over top of your ice cream will keep it from developing freezer burn.
